Sodium propionate

It has a wide range of antibacterial effects on molds, yeasts and bacteria, and is most active in
acidic pH. Used as food preservative, suitable for pastry as preservative and bread as mildew
inhibitor. Sodium propionate is virtually non-toxic to humans. Calcium propionate in food
(calculated by propionate)
